Maragogype. A variety
of the arabica species discovered near the town of Maragogype in
Brazil. It has a large, dull-bluish bean, and produces smooth, fragrant
cups of coffee.
Moka. Coffees produced
in Ethiopia, the home of arabica coffee. In the cup they are remarkable
for their intense taste and unmistakable aroma. Moka coffee beans
contain the lowest quantities of caffeine in the world.
Milling. After being
processed via the wet or dry method, coffee beans are milled to
remove their stiff parchment and light, translucent silver skin.
They are then sorted by size and density. The milling and sorting
processes work to bring like beans together, and this is critically
important to good roasting. Defects, which may include broken or
underripe beans, are also removed during milling and sorting.
