Roasting
During the roasting process green coffee is transformed
into the aromatic product that we purchase in our local supermarket.
Roasting typically takes from between 17 to 20 minutes, with the
roast temperature reaching approximately 200°C. During the roasting
process coffee beans undergo a series of transformations that directly
influence their flavour in the cup, such as the loss of weight,
water and sugar, increased volume, the presence of greasy substances,
as well as colour modification (from green to dark brown) and bean
structure alteration.
